Mediterranean Salad
(Dr. Virji Favorite)
1 can of garbonzo beans
½ head of lettuce
1 cucumber
2 tomatoes
4 coriander leaves
½ teaspoon of salt
1 lemon
¼ tsp red chili powder
Chop lecctuce, tomatoes, cucumber and coriander and mix them together
in a salad bowl. Drain out liquid from can of garbonzo beans and add
into a pot with 1 cup of water. Add salt and chili powder to the pot,
mix, and boil for about 10 minutes. Drain garbonzo beans and add to
salad bowl with the beans on the top. Squeeze over the top one whole
lemon and serves.
