Authentic Italian Ministrone Soup
One head of Romaine lettuce
Two heads of Endivia lettuce
One head of Essccorla lettuce
2 cans kidney beans
3 tbsp olive oil
4 cloves garlic, crushed
3 onions, chopped
6 tomatoes or crushed stewed (blended)
2 cans tomatoes
2 cups water
salt and pepper
Start out by heating oil in a large pot. Add crushed garlic and onions.
Saute for 3-4 minutes till onions become transparent. Cut all lettuce
heads into big chuncky pieces. Then add the lettuce to the onion mixture.
Cook under medium heat until greens wilt down. Add tomatoes and salt
& pepper to taste. Bring up to a boil then add kidney beans and
water. Bring up to a boil again and allow to simmer for 20-30 minutes.
Serves 4-6
