Greek Pesto Chicken
For the Chicken:
1 pound chicken breast cutlets
1 cup low fat Yogurt
Ground Cumin & Corriander (1/2 tsp each)
Salt & Pepper to taste
1/2 tsp mustard seeds
1/2 tsp sliced ginger
2 cloves garlic, sliced
For the Salad:
Any variety of pre packaged lettuce
cucumber, sliced
1/2 cup pitted kalamata olives, sliced
1 tomatoe, diced
salt & pepper to taste
1 lemon, juiced
extra virgin olive oil
10 walnuts
For the Pesto:
1 6 ounce feta cheese, crumbled
1 bunch italian parsley
1/2 onion,
1 garlic clove
10 walnuts
salt & pepper
extra virgin olive oil
Marinate the chicken in the above ingredients for up to 30 minutes then
grill. Mix salad ingredients together and place onto a serving tray.
Blend Pesto ingredients in a blender until a smooth consistency. Layer
slices of chicken breast on top of salad with dallops of pesto sauce
over chicken. Top off with extra feta cheese and parsley leaves for
garnish
