Beef Kebabs
2 lbs lean ground beef (90% lean or better)
1 tsp black pepper
1½ tsp ginger powder
1½ tsp red chili powder
½ tsp cardamom powder
½ tsp salt
1 egg, medium size
1 tablespoon olive oil
Olive oil cooking spray
Mix together ground beef, pepper, ginger powder, red chili powder, cardamom
powder, salt, and olive oil into a mixing bowl. Break one medium sized
egg and add to mixture. Mix ground beef and spices thoroughly by hand
for at least two minutes until spices absorbed by meat. Roll kebabs
into individual lime shaped patties (have a bowl of warm water ready
for hand dipping when rolling kebabs). Grease large frying pan with
olive oil cooking spray. Pan fry (avoid deep frying) kebobs over medium
heat until browned and thoroughly cooked. Serve with a side of Jeddah
Salad (refer to recipe in this book), or side salad if desired. You
may also serve with 6-Step Flat Rotti (refer to recipe in this book),
but be sure to count each rotti as one Category 2.
