Put the cooked cauliflower in a food processor or blender and process until smooth (or use a potato masher). You should end up with around 3 cups of processed cauliflower. Add the grated mozzarella, Italian grated cheese, beaten eggs to the cauliflower and mix well. Add the parsley flakes and basil, salt and pepper to taste and soy flour. Spray a cookie sheet or round pizza pan (these can be found in the grocery store – if using round disposable pizza pans you should get two pizzas). Spread the cauliflower mixture as thinly and as evenly as possible. Bake for 7 to 10 minutes at 425 degrees in the middle of the oven (this will allow the cauliflower to settle). Dress the pizza with pizza sauce and your favorite toppings and bake for 10 to 15 minutes or until the cheese melts on top. Serve this pizza with a big salad with tomatoes, cucumbers, olives and chick peas. Dress the salad with olive oil, salt & pepper and a little lemon juice. Serves 4 to 6
